TRAINING

WORKSHOP OBJECTIVES

In their continuing efforts to improve food safety and shelf life, food safety professionals from industry, academia and regulatory agencies have been using software packages for predicting the growth, survival and death of pathogens in food.  These computational tools are also used increasingly for quantitative microbial risk assessment.

INTENDED AUDIENCE

Food microbiologists (researchers and laboratory managers), food safety officers and microbial risk assessors interested in the use of databases, probabilistic analysis of food safety domains and predictive microbiology.

PREREQUISITES

Basic PC skills and use of Microsoft Excel is desirable.

PRESENTERS

The workshops are held by Dr József Baranyi and his colleagues from the Institute of Food Research, UK, and Dr Mark Tamplin, from the ARS-ERRC, USA.

Dr Baranyi and his team have held several predictive microbiology seminars and courses in the last 10 years. Dr Baranyi has published more ca 50 papers in the area, with a total citation index of more than 1000.  The Baranyi-model is one of the most widely used in predictive microbiology.

Dr Tamplin is the author of ca 100 articles in the field of microbiology. Dr Tamplin and his group produce the USDA-ARS Pathogen Modelling Program (PMP), a resource utilized by nearly a third of US food companies.
